New Booze: The Ministry of Rum Collection

The Ministry of Rum Collection includes rums from Jamaica and St. Lucia.

St Lucia is located roughly 1000 miles north of the equator in the Eastern Caribbean island chain. The molasses used at St Lucia Distillers was sourced from Guyana and contained 65% dissolved sugar, one of the highest sugar contents of any molasses found in the Caribbean. The high sugar content is attributed to the age of the Guyanese sugar mill. 

There are three stills at St Lucia Distillers Ltd. A continuous column still, the Vendome still, and another smaller pot still. The Vendome Pot Still has a capacity of about 2000 liters, and the St. Lucia rums were blended and bottled from 18 barrels of rum distilled with it.  The distillate is condensed at about 82% ABV and put into second-use American oak barrels are filled with fresh rum at about 70% ABV.

The rums from St. Lucia were aged between five and nine years, and each year’s rum is offered both at bottle strength (with filtered water to 46.5% ABV) and at cask strength.  Prior to bottling, this blend was filtered with a one micron filter to remove charcoal that may be suspended in the liquid and that might prevent a malfunction in the bottling machine. No flavoring or color was added. The available rums are:

Saint Lucia Pot Still 5 Year Old Rum 93 proof at 46.5%   

Saint Lucia Pot Still 7 Year Old Cask Strength Rum at 63.8%                          

Saint Lucia Pot Still 7 Year Old Rum 93 proof at 46.5%                     

Saint Lucia Pot Still 8 Year Old Cask Strength Rum at 63.6%        

Saint Lucia Pot Still 8 Year Old Rum 93 proof at 46.5%   

Saint Lucia Pot Still 9 Year Old Cask Strength Rum at 61.3%

There are two rums from Jamaica also available as part of the Ministry of Rum Collection, a Black and a Gold rum. There are both a blend of extra light, light and heavy pot still rums distilled from fermented molasses from the Worthy Park Estate sugar mill in Jamaica. The molasses used at the Worthy Park Distillery is produced at the Worthy Park Sugar Mill on the estate. Three different yeasts are used to produce the three different rums - light, extra light and heavy that are blended together to give the fresh white distillate the desired character and flavor.

The distillate is condensed at about 87% ABV. After dilution, this rum was colored with Sethness Caramel made with US grown sugar cane sugar. Nothing else has been added to this rum. Prior to bottling, this blend was filtered with a one micron filter to remove charcoal that may be suspended in the liquid and that might prevent a malfunction in the bottling machine. The available Jamaican rums are:
